The role of the Pastry Assistant is to work alongside the Pastry Chef in the pastry-making process, to ensure excellent service for our guests, in compliance with our company philosophy, operating standards and procedures. He or she will help to create and maintain a harmonious work atmosphere with a focused approach on collaboration.
Responsibilities and duties:
Will prepare with mastery of pastry techniques baked, leavened and puffed desserts: such as cakes, mignon pastries and croissants;
Will make traditional pastry products, always mindful of a strong aesthetic sense;
Will prepare personalised cakes and baked products for banquets and weddings;
Will prepare spoon sweets such as creams and parfaits;
Will prepare biscuits and savory pastries;
Will work in the pastry-making process efficiently according to company standards and procedures;
Will keep professional and ethical relationships with guests, suppliers and colleagues
Will ensure compliance with all the HACCP system rules (refrigerator temperature control, labelling of processed and unprocessed dishes, workstation sanitisation, correct use of the products according to legal requirements, etc.);
At the end of each shift, will suggest a market-list, to ensure that all supply needs for the following day are supervised. Will take care of the due handover;
Will check the correct use and upkeep of all equipment and materials supplied.
